QUESTION: How do I run Sudoku XP in a window on my desktop?

ANSWER: After starting the game, from the main menu, click on the option that says "Display Window". This will switch to windowed mode. To switch back to fullscreen mode, simply select the "Display Fullscreen" option.

QUESTION: Why does windowed mode run more slowly than the fullscreen version?

ANSWER: Try changing the desktop color depth to 16-bit color mode (NOT 16 color mode). This mode is also sometimes called "Hi-color" mode or "65536 color" mode. Sudoku XP is designed to run optimally in this mode.
